MY PLANT-BASED FOOD CREATIONS!

In this section I wanted to share my favourite dishes to make and eat, as well as showing how as a university student it is relatively easy to eat well on a budget. This will include a breakdown of how I make each dish.

Shown below are just an example of the typical things that I love to eat on a weekly basis.

BREAKFAST

SMOOTHIES!

Im not a huge fan of breakfast... but these are my go to.

Usually every morning before I start any University work I will have a smoothie of whatever fruit I have.

To make the one pictured:

Half the cup full of frozen Strawberries and Bananas.

Add a splash of your favourite milk alternative (I used Tesco's own unsweetened almond milk).

Fill to the top with apple juice.

Blend until your desired consistency.

LUNCH

AVOCADO TOAST

To make this yummy dish:

I half an avocado and mash it in a bowl.

Next i add a pinch of salt and pepper into the avocado and give it a mix.

I sprinkle chilli powder into this mix as well.

Once the bread has been toasted, I evenly spread this mixture on and sprinkle more chilli powder as well as paprika powder on top.

Finally, I use half a teaspoon of olive oil and drizzle this over the toast.

DUCK STIR FRY

This vegan duck stir fry is an easy and quick meal to make, which I love to have mid week.

How to make it:

Add 1tbsp of oil to a pre heated wok on a high heat.

Add your chosen chopped vegetables (in my one, I chose carrots, red onion, red pepper and cabbage) then stir fry for 2 minutes.

Add the cooked protein (in this stir fry I used the Linda Mccartny hoisin duck) and cook for a further 2 minutes.

Add the noodles and cook for 2 minutes. 

Add the chosen sauce (I used sweet chilli) and ensure everything is covered and cooked before serving.
